Isomalt powder is a sweetener used in confectionery and patisserie work. It’s a key ingredient in hard candies, chewing gum and cake decorations.  

Isomalt is an invert sugar so it doesn’t crystallise as quickly as other types. It can be sculpted or formed into shapes using plastic moulds. You can also use it to make ice cream and sorbet.

Unlike other sugars, isomalt doesn’t caramelise or change colour at high temperatures. This makes it ideal for decorative sugar work. You can use it to make decorations that require a clear colour. Get creative with edible gemstones or windows for gingerbread houses.

Isomalt is less sweet than regular sugar, with just over 2 calories per gram. It’s a pantry staple for experienced bakers and candy makers.

Store in a cool dry place, away from direct sunlight. Use within six months of opening.
