Description
Morelli Busiate is a long, spiral pasta shape from Sicily’s Trapani province. It’s said to resemble an old fashioned telephone cord. Toss it with anchovies, garlic and breadcrumbs for a fuss-free supper.
In Sicily, busiate is often paired with pesto alla Trapanese. This fresh sauce is made with almonds, tomatoes, garlic, basil, olive oil and Pecorino. The ingredients are blended or pounded into a creamy paste. Toss the pesto with the busiate and a splash of cooking water to combine.
Morelli pasta is bronze-drawn and dried slowly at low temperatures. This is the secret to the rough surface that helps sauces to cling.
Cooking time: 8 minutes.
Store in a cool and dry place, away from cereals.
