Use organic tonka beans to flavour ice cream and desserts. The dark, wrinkled beans can be grated or added whole to infuse cream and sauces. 

Tonka beans have a complex flavour with notes of vanilla, nuts and caramel. The taste is powerful so use it sparingly in your recipes. A pinch of grated tonka bean adds warmth to baked goods and desserts. It’s fantastic for shortbread and wobbly crème caramel.

Top chefs use tonka beans for all sorts of desserts and pastries. It can also be used in savoury recipes, such as mashed potato and celeriac soup. Try adding a pinch to a buttery sauce for scallops or lobster.

Tonka beans are a popular ingredient for mixology, too. Use the beans to infuse spirits for cocktails like the White Russian or Espresso Martini.
