These Chinese chopped preserved mustard greens bring tangy, pickled, umami savoury notes to dishes. The juicy pickled preserved mustard greens are a popular ingredient and condiment in Shanghai and the Southern Yangtze region. The pickled mustard greens are known as xue cai and are made from the xue li hong ot snow vegetable.
The pickled vegetables make a great addition to Chinese stir-fries, stews as well as Japanese hot pot dishes such as nabemono. These vegetables can be used when recipes suggest ‘ya cai’.
