Halved bamboo shoots have a distinctive crunch and a refreshing light nutty flavour. Drain, rinse and slice these halves then use them to add texture to stir-fries, braised Chinese dishes and Thai curries. Fresh bamboo shoots are fiddly to prepare, so a tin of pre-peeled and cleaned bamboo shoots is a very useful store cupboard ingredient.

Bamboo is an important plant in Chinese culture. Traditionally, it represents the virtuous man who bends in the wind, but does not break. Bamboo shoots are thought to have been eaten in China for over a thousand years. They are also extensively in Japanese, Korean and Southeast Asian cooking.
